Chocolate: Peruvian Fortunato No. 4

Based on a 17th century formula of chocolate, sugar, coffee and spices, these tablets are intentionally left out of temper to offer a crumbly taste experience, it is unlike the chocolate we taste and are familiar with today.

It was so made by the Spanish in Modica, as well as in other places, while they were ruling the Kingdom of Sicily between 1500 and 1700. Beans and sugar were produced abundantly in the conquered lands of South America, true Cioccolato di Modica is considered an IGP (protected geographical indication).

We’ve combined a very special chocolate; Fortunato No. 4, a Peruvian chocolate which was thought to have been extinct for years, it has been recently rediscovered and cultivated. The addition of the spices, including a certified organic natural, non-GMO unrefined sugar from Mexico, orange zest, spices and coffee elevate the tasting experience, in the style of the original Modica chocolate.

There is a secret to combining the ingredients at just the right temperature….too hot and the chocolate will melt the sugar, too cold and it will not set up right and ruin the batch. Each tile is hand packed into an antique-inspired chocolate mould; a hare, hound and stag are featured. Every tile is hand wrapped in a Flemish-blue inspired paper, similar to period papers that wrapped sugar loaves and cones coming from the Caribbean into the Americas and Europe. Each set of 3 Modica-inspired tiles is hand wrapped in indigo paper, packaged and finished with a ribbon and bow in a clear cellophane bag.

Ingredients: Chocolate (Cacao beans, cane sugar, cocoa butter, sunflower lecithin, vanilla beans), cinnamon, clove, mace, black pepper, coffee, orange/tangerine zest.

Allergy Information: Manufactured on shared equipment with tree nuts, dairy, eggs.
